The Perfect Brew:
1. Water: Use pure/filtered water heated to 75°C - 85°C (167°F - 185°F). NEVER use boiling water!
2. Teaware: A clear glass or Gaiwan is ideal to appreciate the leaves' "dance".
3. Measure: Use approx. 3g of tea (enough to cover the bottom of your cup).
4. Method (Recommended - Middle Pouring):
* Warm your cup. Add leaves.
* Pour a small amount (1/3 cup) of hot water over the leaves, just to cover them. Swirl gently for 5-10 seconds to awaken the leaves and aroma (this is the rinse/awakening step). Enjoy the initial scent.
* Then, pour water to fill the cup about 70-80% full.
5. Steep: Allow to steep for 1-2 minutes for the first infusion. Savor the evolving flavors over 3-4 infusions, slightly increasing steeping time for subsequent brews.
